Pieced together a theme today

No Country for Old Men, The Big Lebowski and A Serious Man can all be summed in one quote, "we don't know what's coming, and it's not coming with you in mind".

Moss thinks he can dip in, and benefit from a world and events he can't fully understand. The Dude handles such events in a dogmatically subjective fashion, to great comedic effect. And poor Larry tries to reason - symbolised by his huge blackboard equations and bargaining with higher powers.

We could also consider my favorite, Barton Fink: you took a risk, tried to make it in the big time, and progressively lost control of your life and your work.

I haven't seen Barton Fink, but can believe it.

Also, Miller's Crossing, despite all the great plays, the events are essentially random

This is a theme that is underlined by almost all of the Coen Brothers films that I'm aware of, from their debut film Blood Simple right up until their most recent film, Inside Llewyn Davies.

"Raising Arizona" as well. Because Ed is infertile it leads her and H.I. to kidnap one of the Arizona quints for themselves... which leads to Smalls (aka The Lone Biker of the Apocalypse) coming to hunt them down.

I was going to mention Raising Arizona myself. But my memory of it is a bit hazy now, it being 15 years since I've watched it.
